Morning meals can be difficult – because not all of them are as filling as they need to be. That’s part of why I love oatmeal. It’s filling, it’s nutritious, and it’s so flexible! Well, in an homage to my Scottish roots, I wanted to find an easy Scottish porridge recipe that I could make for cold, hungry mornings. Porridge is a fantastic, flexible, and filling – it’s a traditional Scottish recipe that should be made more often! And it’s just different enough from oatmeal that it adds a whole new breakfast item into the meal rotation.
Plus, it’s just a lot more fun to say “porridge” than it is “oatmeal.” So, let’s do this!
Let’s Make this Easy Scottish Porridge Recipe!
Now, while this recipe calls for premium rolled oats, you can substitute those with pinhead steel-cut or quick oats. If you do that, though, make sure you adjust the initial cooking times based on the instructions that come on the package. That being said, because porridge is generally a lot smoother than regular oatmeal, I’d recommend you stick with the rolled oats.
In order of my preference for taste and texture, it was a tie between steel-cut oats and a premium rolled oat – and at a distant tie for third was quick oats and a generic rolled oat.

So let’s dive into some Scotch porridge already.
- 3 cups water
- 1 cup rolled oats
- 1 cup whole milk
- 1 tsp brown sugar, optional topping
- 1/4 cup fresh fruit, optional topping
- 1 pinch salt
- Combine water, salt, and oats in a saucepan and cook on low heat for 20 minutes, stirring regularly every few minutes to prevent lumpy porridge.
- Once the majority of the liquid has been absorbed and the oats have thickened, add the milk.
- Cook an additional 10 minutes, stirring occasionally.
- Allow porridge to rest for a minute before eating.
- Finally, feel free to top with brown sugar, fruit, yogurt, or anything else (this step is totally optional).

Plus, it’s filling and it reminds me of what my grandmother used to say… “it’ll stick to your ribs!” I think that was her way of saying it’d fill me up and give me energy for the whole morning! Because with this porridge, it’s absolutely true.
Porridge is a Budget-Friendly Breakfast
On a tight budget? Whether you’re saving up to pay off debt or just making every penny count, porridge is amazing. Not only is it a great way to get great, nutritious goodness in your tummy, but it also does so for less than $1 each batch. Of course, getting your picky eaters to learn to love it is a whole other ballgame, but it’s one I’m willing to work on. Especially since it’s only $1 per batch to let them stare and pick at it. *sigh* One day, right?
Baking Tips for Making a Proper Porridge
Traditionally speaking, you should be using a fancy wooden mixing spoon called a “spurtle” to stir your porridge – like this one or even this set. However, while you’re trying porridge out the first time or two, a normal wooden spoon will also work!
Again, if we’re going to go ultra-traditional, you should be eating your porridge out of this kind of bowl – preferably one your family made!
However… if you’re willing to modernize things just a wee bit, then this is the perfect opportunity to use a regular wooden spoon to mix your porridge in my most favorite, versatile kitchen pot!
